I love cooking with protein powder. I’m not one of those people that don’t like the taste of protein and I never feel bad about eating “protein anything” because it is so good for you. If you are creative enough, or make an effort to research just how much you can make with substituting protein in for flour, you will be well on your way to a much healthier lifestyle!
I constantly post photos and videos of the meals I make in a day and this particular dessert ALWAYS receives a few messages that say: “OMG THAT LOOKS BOMB” or “How did you make that?!”…so, I figured it was time to share with all of you!
For this recipe, you will need:
1. 1 scoop of protein powder (I use Quest Cookies and Cream protein powder)
2. 1 tsp of coconut flour (you don’t have to use this but it makes the texture more “cake-like”)
3. A pinch of baking powder
4. 1 egg white
5. 1/4 cup of almond milk
Step one: grab a mug. This is my favourite mug ☺️:
Step two: Mix all the ingredients together in the mug. The texture should look like this:
Step three: Insert the mixture into the microwave and set it to one minute. If you see a lot of uncooked mixture, then put it in for 10 second intervals until it is a cake-like consistency. You should not put it in for longer than a minute at first, or it may overcook.
Step four: Let the cake sit while you prepare the toppings. You can do this in various ways; I usually like to put CoCo Whip on top which you can read about in my other blog post here. However, this time I opted to “ice it” with some vanilla greek yogurt. I also heated up some frozen berries and poured it on top for some presentation value! Once you have made your toppings, throw it on your cake and enjoy!
Really fun fact about making this blog post: I cracked my favourite mug. If you go back in the photos of each step you will notice…I was mixing too hard, oops! 😞😅
